Abstract
Food insecurity is a growing concern in Monterey County, particularly impacting underserved communities, including college students. This capstone project aims to address the need for food resource awareness among college students at Hartnell College, while providing a nutritional cultural tailored plant-based meal. College students have an overwhelming amount of pressure balancing school work and their own personal lives. Outside barriers, such as food insecurity, have an adverse influence on their well-being, which can impact their academic performance in their studies. El Mercado is a basic needs resource center located at Hartnell College, supporting students with free basic need supplies located on campus. This capstone project was implemented at Hartnell College in Salinas and served a wide range of students on campus. The event included students tasting a culturally influenced plant-based meal where students are able to access main ingredients at El Mercado. As a result of the project, 80 Hartnell College students tasted this dish and participated in a survey to measure how many students have experienced food insecurity. Results from these surveys show that a majority of students enjoyed the food tasting and would make this meal at home with ingredients found at El Mercado. Results also showed the event raised student awareness of El Mercado’s resource center to help students. These findings highlight the importance of community initiatives to inform and update populations about available resources.
