Abstract

This project is the author's contribution to the future children and educators in the San Diego County area. With the economic recession, one pinches pennies and do whatever one can to survive. This usually means overlooking the important things like health and nutrition. People are less willing to spend money on quality nourishment and eat junk food instead because it is fast, cheap and convenient. This habit can lead to obesity especially in young children and as educators and community members we must do what we can to prevent it. I have created a healthy multicultural children's cookbook that encompasses both healthy eating habits as well as the multicultural demographic these children live in. It is a tribute to their city, their home and their history. It's also to show that through food, we can begin to respect other cultures and appreciate the differences while finding the commonality in consumption and enjoyment.
